Instant Pot Keto Chili
As the weather gets cooler and football is in full swing, one of the favorite dishes around my house is chili. My husband loves the hearty, meaty goodness of a big bowl of chili. Every time I make a big pot of chili, it is gone in a blink of an eye. It used to take hours on the stove to develop all the thick rich flavors, but now with my new favorite kitchen appliance: the Instant Pot, it has become so easy and convenient.
How to make Instant Pot Keto Chili
Having an Instant Pot is one of the best investments you can make if you are anything like me and prefer to make your food from scratch. It cuts down on cooking time, gives fantastic results and locks in nutrition and flavors. No longer do you have to simmer your chili or stew for hours. Just pop your ingredients into the Instant Pot, use the saute feature and pressure cook to give your dish that ” I slaved for hours over a hot stove” taste! However, if you do not have one of these amazing gadgets, I have also included regular stove top instructions at the end of this post.
Ingredients
- 1/2 onion diced
- 3 pounds ground beef ( grass fed and finished is preferable )
- 1 tablespoon bacon grease ( you can use avocado oil or lard, but ohhh the flavor of bacon grease )
- 1 – 4 oz. can of green chiles
- 2 tablespoons ground cumin
- 1 tablespoon smoked paprika
- 1 tablespoon ground chipotle ( add more if you like heat )
- 1 tablespoon Himalayan sea salt
- 1/4 teaspoon black pepper
- 1 – 6oz. can tomato paste
- 2 cups bone broth
- 1 tablespoon apple cider vinegar
- 2 tablespoons coconut aminos
- 1/2 teaspoon xantham gum
Instant Pot Directions
- Place bacon grease into Instant Pot liner with diced onion and ground beef.
- Saute for approximately 8-10 minutes until beef is browned.
- Add salt, pepper, paprika, cumin and chipotle and mix into the beef mixture.
- Turn the Instant Pot off.
- Add green chiles, tomato paste and bone broth to the mixture.
- Put on the lid making sure the valve is set to sealing.
- Cook on manual setting/ high pressure for 25 minutes.
- Quick release once the unit is finished and remove lid.
- Turn on saute function and add in the apple cider vinegar and coconut aminos.
- Gradually add in the xantham gum slowly while stirring making sure it does not clump until chili thickens.
- Enjoy!
Stove Top Directions
- Place bacon grease into a large pot with diced onion and ground beef.
- Cook on medium heat for approximately 8-10 minutes until beef is browned.
- Add salt, pepper, paprika, cumin and chipotle and mix into the beef mixture and cook an additional few minutes until spices are well incorporated.
- Add green chiles, tomato paste and bone broth to the mixture.
- Stir well and bring to a simmer.
- Simmer covered on low heat for 4 hours giving the flavors a chance to develop.
- Add in the apple cider vinegar and coconut aminos.
- Gradually add in the xantham gum slowly while stirring making sure it does not clump until chili thickens.
- Enjoy!
How to make a Chili Bar for your next party
One of the great things about a big pot of chili is that it is so versatile and perfect for parties and large gatherings. I like to do a big buffet table with all the toppings so that everyone can customize their meal. I also like to provide some non keto offerings so that there is something for everyone.

- shredded cheese
- diced avocado or guacamole
- sour cream
- onions
- salsa
- shredded lettuce
- sliced olives
- crushed tortilla chips (non keto)
- sliced jalepenos
- chopped cilantro
- green onion
- crumbled bacon

- baked potatoes ( non keto)
- truffled egg salad
- green salad
- pork rinds and tortilla chips (non keto) to make nachos

I love chili too! I haven’t joined the Instant Pot train yet…that would be just one more appliance to keep track of š But I do love using my slow cooker, and this recipe would work great for that too.

I still am not sure what an Instapot is but this recipe looks so good I think it is time I figure it out and maybe pick one up. I really like the idea of adding bacon grease to the chili for some added flavour.

What can I use instead of xanthum gum?
You can omit the xanthum gum if you like. It’s only used as a thickener.
Do you have the macros for this?
I’m sorry Jackie I don’t but I am working on getting the macros put on my recipes as soon as I can figure out the tech.
I figured I’d stop in at comment that I would love to try this but won’t be using this recipe as it doesn’t have the nutrition facts. That’s one of the biggest things people look for so when you post a keto recipe without it’s hard to take it seriously. I could look it up by each ingredient but there’s a reason I googled “Keto chili”.
