Dairy Free Keto Pancakes/ Fresh Strawberry Sauce
This is my “Breakfast of Champions”! Nothing better than fluffy pancakes with your choice of topping.

Ingredients
Dairy Free Keto Pancakes
  • 1.25cup unsweetened vanilla almond milkYou may need to add more or less depending on the type of coconut flour you use
  • 1/2teaspoon vanilla extract
  • 4 large eggs
  • 1.5cups fine ground almond flour
  • 1/4cup coconut flour
  • 1teaspoon baking powder
  • 1tablespoon Monksweet
  • 2tablespoon coconut oil
Fresh Strawberry Sauce
  • 1cup strawberries
  • 1/4cup coconut milk
  • 1/2teaspoon low carb sweetenerI use Monksweet
Instructions
Fresh Strawberry Sauce
  1. Wash and clean your strawberries.
  2. Add coconut milk,sweetener and blend until smooth with your immersion blender.
  3. Set aside while you make the pancakes ( You can add a few drops of liquid stevia to taste if you need it sweeter)
Dairy Free Keto Pancakes
  1. Place all ingredients in a blender and mix until batter is smooth and all lumps are gone. Blend on high another minute or two to incorporate more air to give the pancakes a fluffier texture.
  2. Heat flat top or pan and coat with avocado or coconut oil.
  3. Pour enough batter out to make a 3″ pancake. It should only take a few minutes each side. Make sure to oil after each batch.
  4. Serve with fresh strawberry sauce and enjoy!

Each serving is 5 pancakes. Nutritional values are for the pancakes only. For those that are not dairy free, I will be working on a few other sauces.

I usually make these in a big batch and freeze them in portions for the week.
