Ingredients
Lo Mein
  • 6cups Zuchinni noodlesabout 3-4 zuchinni
  • 3/4 cup shitake mushroomsjulienned
  • 1tablespoon green onionchopped
  • 1.5cups broccolichopped
  • 1 pound chicken thighssliced
  • 1/2 green peppersmall, julienned
  • 1tablespoon ume plum vinegar
  • 2tablespoons coconut oil
  • 1teaspoon toasted sesame oil
Chicken Marinade
  • 1/2teaspoon fresh gingergrated
  • 2tablespoons coconut aminos
  • 1/8teaspoon xanthan gum
  • 1/4teaspoon garlic powder
Instructions
Chicken Marinade
  1. In a small bowl combine all the marinade ingredients and mix well.
  2. Place sliced chicken thighs into the marinade and stir until all the chicken is covered
  3. Set aside chicken while you work on the rest of the dish
Lo Mein
  1. Melt coconut oil in a large wok or skillet until hot
  2. Add mushrooms, broccoli and green pepper and stir fry until just tender, approximately 4-5 minutes ( salt and pepper to taste)
  3. Add sliced marinated chicken and cook a few minutes until done
  4. Place the zucchini noodles one cup at a time into mixture ( the noodles will quickly lose volume as they cook so that you can add more )
  5. Add in the green onion and ume plum vinegar
  6. Cook throughly until noodles are soft and moisture from zucchini has cooked off
  7. Take noodles off heat and drizzle with the toasted sesame oil
