Pancake Breakfast Sandwich
Who doesn’t love pancakes? And when those pancakes are made into a delicious breakfast sandwich that you can prepare in advance. You can just heat them up when you need breakfast or a quick and easy snack. How perfect is that! This pancake breakfast sandwich is great in the taste department yet so convenient for those busy mornings. If it’s just you, make 5-6 of them for the week. If you are meal prepping for a family of four, make a couple dozen. The beauty of these breakfast sandwiches is that they are totally customizable, depending on your tastes and food sensitivities. Suitable for grain free, sugar free, dairy free, paleo, and even vegetarian as long as eggs are ok.
How to Make Pancake Breakfast Sandwiches
The first thing you need to prepare is the fluffy dairy free pancakes. Use this recipe and make a huge stack of them! I guarantee that the extras if you have extras will not go to waste. You can even have a stack with some low carb Lakanto Maple syrup which is my favorite. Calculate how many sandwiches you are making and double the number of pancakes.
What Should I put in my Pancake Breakfast Sandwich
- Fried egg, Scrambled eggs or large omelette cut into squares or rounds
- Breakfast Sausage ( link to my Homemade Breakfast Sausage recipe)
- Cheese ( Swiss, Cheddar, Parmesan, Mozzarella, Monterey Jack…)
- Smoked Salmon
- Canadian Bacon
Once you have decided on what you want to put into your breakfast sandwich, it is time to assemble them. I like to pick a large table where I can put them together like an assembly line. This is a perfect opportunity to get help from friends and family. Make it a fun group project! Place out your pancakes, meats, cheeses, egg, etc… onto plates in the order you want. I usually like to make a baking tray with pancakes for the bottoms, then I add the egg, proteins, veggies and cheese on top. Then place the second pancake on top and there you have it, your customized pancake breakfast sandwich! Wrap them individually with either wax paper or parchment paper and refrigerate. They can be kept refrigerated for up to a week and just heat up for 30 sec – 1 minute in the microwave whenever you need a quick and easy breakfast or snack.
