Healthy Egg Salad

Great for picnics and brunches with easy Instantpot instructions on making hard boiled eggs. You can't go wrong with this healthy fat version of egg salad.

  • 12 large eggs diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped
  • 1/2 teaspoon Himalayan sea salt
  • 1/8 teaspoon black truffle oil


  1. Dice up your hard boiled eggs and place into a large mixing bowl.
  2. Add mayonnaise, mustard, parsley, salt and truffle oil.
  3. Gently fold in all ingredients until combined.
  4. Refrigerate for at least a few hours before serving.
  5. Best served chilled.
