Loaded Cauliflower Mash

Who doesn't love loaded mashed potatoes! I know I do and so does the rest of my family. This loaded cauliflower mash is about as close to loaded mashed potatoes without the high carb potatoes, that I could find. It is a great easy side dish you can pair with a simple grilled steak, chicken or salmon.

Ingredients

  • 2 pounds cauliflower riced or coarsely chopped
  • 1 cup water
  • 1 teaspoon Himalayan sea salt
  • 2 tablespoons butter can sub with ghee or omit if dairy free
  • 6 slices bacon cooked and crumbled
  • 1/4 cup cream cheese use Kite Hill cream cheese if dairy free
  • 1 cup cheddar cheese shredded, omit if dairy free and use 1/2 cup nutritional yeast
  • 1/4 cup green onion finely chopped

Instructions

Instant Pot Directions

  1. Pour one cup of water into the bottom of the inner pot and place silicon strainer into the bottom of the inner pot
  2. Place two pounds of chopped cauliflower into a small bowl and place on top of your steamer in theĀ Instant PotĀ .
  3. Close the lid, make sure your valve is set to sealing
  4. Cook on manual high pressure for 4 minutes
  5. Immediately quick release the pressure and open lid. Take out the strainer and cauliflower and pour out the water. Return the steamed cauliflower to the pot.
  6. Drain well and use your immersion blender to puree the cauliflower.
  7. Add in the butter and cream cheese, pulse with immersion blender until mixed in
  8. Fold in cheddar, bacon and green onions ( I usually reserve a bit of the cheese, bacon and green onions to garnish the dish on top)

Stovetop Directions

  1. Fill a large pot with 1 cup of water and place steamer basket on top.
  2. Place two pounds of chopped cauliflower into the steamer basket and cover. Bring water to a boil and turn down heat to a simmer.
  3. Steam cauliflower about 15 minutes depending on how tender you like it.
  4. Drain well and use your immersion blender to puree the cauliflower.
  5. Add in the butter and cream cheese, pulse with immersion blender until mixed in
  6. Fold in cheddar, bacon and green onions ( I usually reserve a bit of the cheese, bacon and green onions to garnish the dish on top)

Meal Planning Tips

I like to make a double batch of this dish on my meal prep day. I make half of the mash loaded and the other half plain for more versatility.. I portion them out into individualized containers so that mealtime is easy peasy throughout the busy work week.
