Curried Pork Noodles

One of my favorite dishes, before I started the ketogenic way of eating was Singapore curried rice noodles. This dish has all the spices I am craving with a healthy dose of vegetables and is so quick and easy to make.

  • 2 packages Miracle noodle angel hair or spaghetti
  • 1 tablespoon apple cider vinegar
  • 1 pound ground pork
  • 1/4 teaspoon garlic minced
  • 1/4 teaspoon fresh ginger minced
  • 2 tablespoons curry powder
  • 1 teaspoon Himalayan sea salt
  • 1 teaspoon Swerve or other keto approved sweetener
  • 1 tablespoon coconut oil
  • 1 cup celery diced
  • 2 cups Napa cabbage julienned
  • 1 tablespoon ume plum vinegar
  • 1 tablespoon fish sauce
  • 1 lime wedged


  1. Open your packages of Miracle noodles and rinse very well.
  2. Place rinsed noodles in a large bowl and cover with water. Add apple cider vinegar and mix well. Set aside and let soak.
  3. In a large skillet or wok, add ground pork, coconut oil, garlic, ginger, 1 Tbs. curry powder, Swerve and salt. Brown over medium high heat.
  4. Add celery and sauté for about 3 minutes or until almost tender.
  5. Drain noodles well and add to the pork mixture.
  6. Mix in Napa cabbage, ume plum vinegar, fish sauce and remaining 1 Tbs curry powder.
  7. Stir fry on medium high heat until noodles and cabbage are soft ( approximately 5 minutes)
  8. Serve with a squeeze of lime on top.
