Roasted Radishes

This dish is full of garlicky goodness and believe it or not when you roast radishes, their flavor really mellows out and takes on the flavor of the duck fat and herbs. I don't know why I never tried this before ... It is the perfect side for roast chicken, steak or just about anything.

Ingredients

  • 2 pounds radishes
  • 1 teaspoon Himalayan sea salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic minced
  • 2 tablespoons Duck Fat
  • 1/4 cup fresh parsley chopped

Instructions

  1. Preheat oven to 425 degrees F.
  2. Wash and halve your radishes.
  3. Place them into a large mixing bowl and toss in salt, pepper, duck fat, garlic and parsley.
  4. Place on a foil covered baking sheet and roast for 30 minutes.
