Low Carb Chicken Avocado Salad

This chicken avocado salad is one of my favorites because it tastes so fresh and light , but is so surprisingly satisfying.

Ingredients

Ingredients for salad:

  • 1 avocado diced
  • 2 Tbs Cilantro chopped
  • 2 cups cucumber diced
  • 2 cups raw zucchini diced
  • 1 Tbs red onion minced
  • ½ cup tomato diced
  • 1 cup chicken diced or shredded

Ingredients for Dressing:

  • ¼ cup lime juice
  • ¼ cup extra virgin olive oil
  • ½ tsp Himalayan sea salt
  • tsp ground black pepper
  • 1 tsp dijon mustard

Instructions

  1. In a large mixing bowl, combine all the ingredients for the dressing except the oil. Mix well.

  2. Gradually whisk in the olive oil until an emulsion forms.

  3. Toss in the rest of the ingredients of the salad and gently combine.
  4. Refrigerate
  5. Garnish with extra cilantro before serving (optional)
  6. Best served chilled

Recipe Notes

I like to make this the day before and let it marinate in the dressing overnight, but if you can’t wait it is delicious just as is. I use leftover rotisserie chicken, but you can also use shrimp or crab. If you prefer to keep this avocado salad vegetarian, just omit the chicken.
