Looking for a quick and satisfying meal to prepare in a pinch? Not much on hand because you have not had time to stop by the store? This was my situation when I came home after six and a half weeks away for radiation treatment. I was tired and just wanted something easy and comforting. I had a few basics in the refrigerator like my homemade mayonnaise, some kale and canned salmon. This recipe is my “go to” for when my cupboard is bare.

Easy Ketogenic Salmon Patties

These low carb, dairy free salmon patties are good for a quick and tasty meal. Just pair them with some vegetables sautéed in coconut oil, roasted radishes or a small side salad for the perfect no fuss lunch or dinner. Not only are these salmon patties delicious but they are also full of nutrients and healthy Omega 3 oils. Did I mention that these are very kid friendly too! No need to make a bunch of different dishes if the rest of the family is not eating the same diet.

  • Combine all ingredients into a large bowl.
  • Form mixture into small patties by hand.
  • Sautée in a skillet with coconut or avocado oil, over medium high heat until browned and crisp ( approximately 2 minutes each side)

Top with homemade ranch dressing or add some fresh chopped garlic to your homemade avocado oil mayo for a nice aioli.

This recipe is highly adaptable. If you do not have salmon on hand, you can always substitute with tuna or even shredded rotisserie chicken. Want more heat? Then add in some diced jalepenos. Give them an Asian twist: use tuna, add coconut aminos and sesame seeds. The possibilities are endless…

Simple and easy low carb, paleo, gluten free, dairy free and ketogenic salmon patties.

  • 16 ounces salmon flaked or canned
  • 1 large egg
  • 4 tbsp mayonnaise
  • 1/4 teaspoon Himalayan sea salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon lemon zest
  • 1/8 teaspoon black pepper
  • 2 teaspoon fresh parsley chopped
  1. Combine all ingredients into a large bowl.

  2. Form mixture into 8 small patties by hand.

  3. Sautée in a skillet with coconut or avocado oil, over medium high heat until browned and crisp ( approximately 2 minutes each side)

Serve with a small side salad or greens cooked in coconut oil.
