I remember one of my fondest memories growing up was when my parents took me out to eat at the Black Eyed Pea. Being a creature of habit, I would always order the same exact thing every time: chicken fried chicken with cream style gravy and two servings of the squash casserole. Nevermind that I didn’t like squash, in this casserole it was GOOD! This recipe for keto southern squash casserole is reminiscent of my childhood, and even though it is low in carbs, it is definitely not low in flavor.
If squash is just not your thing, I TOTALLY understand. My youngest son gags at just the thought of squash, then this recipe is probably not for you. But if you are on the fence, this keto southern squash casserole just might make a believer out of you. It is pure Southern comfort at it’s best and our family, with the exception of my youngest, can’t seem to get enough of it.
How to Make Keto Southern Squash Casserole
Ingredients needed
- 4 tablespoons butter or ghee
- 6 cups diced yellow squash
- ½ cup diced onion
- 3 eggs
- 1 cup heavy whipping cream
- 1 teaspoon Himalayan sea salt
- ½ teaspoon black pepper
- ¼ teaspoon ground nutmeg
- ¼ teaspoon cayenne pepper
- ¼ cup grated parmesan cheese
Directions
- Preheat oven to 350 degrees F
- In a skillet, melt butter or ghee over medium heat until pan is hot
- Add squash and onion and saute until just tender.
- Place the squash mixture evenly into the bottom of of a 9”x 13” glass dish
- In a mixing bowl combine the rest of the ingredients except for the grated parmesan cheese
- Mix well
- Pour the mixture over the squash
- Top with the grated Parmesan cheese
- Bake for approximately 45 minutes until cheese is browned and casserole is set. Time will vary depending on how hot your oven runs.
- Let set for 10-15 minutes.
- Serve either warm or at room temperature.

This casserole can be made ahead of time and refrigerated for a quick and easy weekday side. You can also add in some chopped bacon and/or spicy crumbled sausage to make it a satisfying main course.

You can mix up the spices in this recipe too. Use Colby Jack cheese, Chili Powder, Cumin, and Cayenne to taste for a Mexican Flair. We love it with Sweet Italian sausage or browned hamburger or ground turkey added as well. Very versatile recipe.
