I love sheet pan meals because of how easy and quick they are to prepare, especially for those busy weekdays when you just couldn’t be bothered. This recipe for Sheet Pan Salmon and Asparagus is one of our family favorites. It’s simple yet full of flavor and full of healthy Omega 3 fats. Not only is it healthy and convenient, but it’s a dish that is sure to please the whole family.
In our family, we have developed a new tradition where each one of our boys is responsible once a week to prepare a healthy, nutritious meal for the whole family. Not only does it teach them how to make simple dishes, but it also gives me a well deserved break from the kitchen. Over the years, I have developed a lot of very easy and simple recipes that my sons can prepare and put them together in a binder so that they can plan out their weekly meals. How to Make Sheet Pan Salmon and Asparagus
Ingredients
- 4 wild salmon fillets
- 1 – 2 lemons
- 4 Tbs grass fed butter (Dairy free option, avocado oil mayonnaise or coconut oil)
- 1 pound asparagus (trimmed)
- 2 Tbs pesto
Directions
- Preheat oven to 350 degrees F.
- Cover baking sheet tray with aluminium foil.
- Place salmon fillets, skin side down on top of the foil.
- Season with salt and pepper.
- Place slices of lemon on top of each fillet.
- Place one tablespoon of butter on top of each fillet.
- In a small mixing bowl, place asparagus and pesto. Combine until well combined.
- Place pesto coated asparagus onto the baking sheet.
- Bake for 12-15 minutes.
- Enjoy
