  • 1/2 onion diced
  • 3 pounds ground beef grass fed if possible
  • 1 tablespoon bacon grease
  • 1 can green chiles 4 oz
  • 2 tablespoons cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground chipotle you can add more if you like heat
  • 1 tablespoon Himalayan sea salt
  • 1/4 teaspoon black pepper
  • 1 can tomato paste 6 oz
  • 2 cups bone broth
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons coconut aminos
  • 1/2 teaspoon xantham gum


  1. Place bacon grease into Instant Pot liner with diced onion and ground beef
  2. Saute for approximately 8-10 minutes until beef is browned
  3. Add salt, pepper, paprika, cumin and chipotle and mix into the beef mixture
  4. Turn the Instant Pot off
  5. Add green chiles, tomato paste and bone broth to the mixture
  6. Put on the lid making sure the valve is set to sealing.
  7. Cook on manual setting/ high pressure for 25 minutes
  8. Quick release once the unit is finished and remove lid
  9. Turn on saute function and add in the apple cider vinegar and coconut aminos
  10. Gradually add in the xantham gum slowly while stirring making sure it does not clump until chili thickens
  11. Enjoy
