Low Carb Coconut Flour Waffles

This recipe makes 3 big waffles and section is considered a serving. I know you might be thinking , “That’s not very much” Rest assured, these are really filling. I typically can only eat 2 pieces before I am completely full. These are great served in a brunch type setting. You can add on fresh berries, whipping cream, or even a dusting of cocoa powder. However, I prefer to keep it simple with just a wee bit of monkfruit maple syrup. This dish really makes me feel like I am having a decadent treat, but without any guilt!

  • 5 tablespoons ghee or coconut oil
  • 6 large eggs
  • ½ tsp baking powder
  • cup coconut flour
  • 1 tablespoon keto compliant sweetener optional
  • 2 tablespoons mayonnaise
  • Water or almond milk optional to thin the batter to optimum consistency as coconut flours will vary


  1. Heat up waffle iron

  2. Place all wet ingredients in your blender except for the optional water or almond milk.
  3. Add in dry ingredients and blend.
  4. Depending on your brand of coconut flour, you may need to add extra liquid to get a nice batter consistency
  5. Spray waffle iron with non stick coconut or olive oil
  6. Pour batter into heated waffle iron. ( Be careful not to overfill or you will have batter all over the place)

Recipe Notes

If you would like to have these on hand as snacks, I usually like to prepare a large batch on the weekend. Just let them cool off and pop them into plastic freezer bags. They freeze beautifully and you can heat them up quickly in the toaster directly from frozen.
